Just like I previously shared with the Iced Peanut Butter Banana Latte, I love the peanut butter and oat milk combination, almost tasting like a nutty, creamy latte all on its own. This Peanut Butter Oat Popsicle recipe elevates that flavor combo to the summer staple. Creamy and milky peanut butter with a crunch of chocolate is so irresistible!

And I’ve always been a huge fan of healthy and easy homemade treats that transfer classic indulgence to modern-day recipes. Homemade popsicles are one of the easy recipes to try at home! Because all you need to do is just blend and freeze. Fruit-based popsicles like Watermelon Lime Popsicles are so refreshing and also great for hydration on a hot summer day. On the other hand, creamy and rich popsicles like Homemade Chocolate Popsicles and these peanut butter popsicles are amazing desserts after dinner and summer BBQs. You can’t decide fruity or creamy? The Ingredients of Peanut Butter Popsicles

For the Popsicles

  • Peanut butter: Use unsweetened, unsalted, natural peanut butter made with 100% peanuts. Use creamy kind.
  • Oat milk: Oat milk is my milk of choice for its creaminess and subtle sweetness. But
  • Maple Syrup: Maple syrup adds wholesome sweetness and goes really well with peanut butter. You can also use other sweeteners like honey and agave.
  • Vanilla Extract and Sea Salt: For the boost of flavor.

For the Chocolate Shell

Creamy and rich peanut butter popsicles complete with the crunch! So let’s make an easy chocolate peanut shell to coat the popsicles.

  • Chocolate Chips: The bitterness of dark chocolate chips well balances the sweetness of peanut butter popsicles. But you can use your favorite kind of chocolate chips for this recipe.
  • Coconut Oil: Makes melted chocolate smooth and runny, making it easier to run over the popsicles.
  • Peanuts: Adds tasty crunch to the shell. Toast them on the stovetop or in the oven until golden before use. Let cool and finely chopped

I don’t like to have a lot of leftover melting chocolate after the cooking project. So the amount of chocolate shell is very minimal. But unlike dipping a whole popsicle into a chocolate mixture, drizzling chocolate over the popsicles saves a lot of extra chocolate but archives the crunchy texture we all admire.

How to Make Peanut Butter Popsicles at Home

First, add oat milk, maple syrup, peanut butter, vanilla extract, and salt into a high-speed blender. Blend until smooth and creamy. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze overnight until solid.

When the popsicles are frozen and solid, prepare the chocolate shell. In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave for 30 seconds. Use a spoon to mix together to combine. If chocolate chips are not fully melted yet, microwave longer, 15 seconds at a time, until smoothly combined.

To release the popsicle from the mold, run the bottom of the mold under the running water for 5-10 seconds. Carefully remove the popsicles from the mold. Drizzle the melted chocolate mixture over the and sprinkle peanuts on the chocolate so they stick. Place them on a plate or tray and freeze to set the shell. Enjoy!

Ingredients
  

For the popsicle

  • 1 cup oat milk
  • 6 Tablespoons maple syrup
  • 6 Tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • Pinch sea salt

For the chocolate shell

  • ¼ cup chocolate chips
  • 2 teaspoons coconut oil
  • 1 Tablespoon peanuts toasted and finely chopped

Instructions
 

  • Make the popsicles: In a high-speed blender, add milk, maple syrup, peanut butter, vanilla extract, and salt. Blend until smooth. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze overnight.
  • Make the chocolate shell: In a small microwave-safe bowl, combine chocolate chips and oil. Microwave for 30 seconds. Mix together to combine. Microwave longer if necessary, 15 seconds at a time, until smoothly combined.
  • Run the bottom of the mold under the running water for 5-10 seconds to help release the popsicle. Remove from the mold. Drizzle or dip the tip into chocolate and sprinkle peanuts. Freeze to set the shell. Enjoy!
