Healthy Watermelon Lime Popsicles (With Basil Yogurt Rind)

These healthy Watermelon Lime Popsicles are a refreshing summer dessert made with real fruits. The popsicles are made with sweet watermelon and bright refreshing lime with a pinch of salt and keep you hydrated all summer long. It’s so easy to make and healthier than store-bought ones. They’re vegan and gluten-free.

This recipe is a cute homemade popsicle idea that just looks like real watermelons! They’re great as a snack for kids or BBQ outside. These watermelon lime popsicles are sweet, refreshing, tangy, and a hint of salty which is all you want under the summer heat!

The Ingredients of Watermelon Lime Popsicles

  • Watermelon: Use a fresh, ripe, seedless watermelon and cut into cubes. This recipe calls for 3 cups, which is about ¼ medium watermelon.
  • Maple Syrup: Adds wholesome sweetness.
  • Limes: Lime juice brightens up and balances out the the sweetness of watermelon. Use freshly squeezed lime juice for the best result.
  • Coconut Yogurt: Use thick Greek-style yogurt if possible. The creamy texture and sour tang from yogurt pair well with watermelon. You can also use regular Greek yogurt if you don’t need these popsicles to be plant-based.
  • Basil: Gives the green hue. The flavor of basil adds an extra refreshing flavor.
  • Cacao Nibs: Use as a topping for watermelon seeds effect on the popsicles. You can alternatively use chocolate chips.
  • Salt: A small amount of salt can help replenish these lost electrolytes.

How to Make Homemade Popsicles

Step 1 Make the Watermelon Lime Layer

First, cut fresh watermelon into cubes.

In a blender, add watermelon, maple syrup, juice from 2 limes, and salt. Blend until smooth. Divide into popsicle molds, leaving about an inch unfilled on top. Freeze while preparing other ingredients.

Step 2 Make the White Yogurt Layer

Next, let’s make the coconut yogurt layer. This white layer looks like a white rind between red watermelon flesh and green skin.

In a small blender, combine coconut yogurt, maple syrup, and juice from 1 lime. You can give a quick blending to combine or simply mix with a spoon. Scoop the mixture(about 2 teaspoons of it) and gently arrange it into a popsicle mold over the watermelon layer.

Freeze while preparing the green layer.

Step 3 Make the Basil Yogurt Layer

Add fresh basil to the remaining yogurt mixture and blend until smooth. The recipe calls for 8 regular, a few inch length, basil leaves and you can adjust the color by adding more or less basil. The basil leaves I used were massive, bigger than my palm, so I used two of them and made it a nice bright green.

Then gently arrange it over the yogurt layer. Cover and insert popsicle sticks. Leave some space on top of the mold for the popsicles to expand while freezing.

Freeze until solid, for about 4 hours, preferably overnight.

Step 4 Freeze, Remove, and Enjoy

Remove the frozen popsicles from the freezer. Then let’s remove them from the mold!

If you’re using an individual metal mold(like the one in the photo below), dip each mold in water for a few seconds. Pull the stick to remove it from the mold, the popsicles should come out easily.

If you’re using silicon mold, or metal mold but each mold is connected together, run the mold under running water for 5-10 seconds. Silicone mold is flexible, so pushing from the bottom helps popsicles to slide out.

These popsicles taste so good just as they are, but we can add a finishing touch with cacao nibs to make them look more like real watermelons.

Sprinkle some cacao nibs on top and enjoy!

For the rind

  • ½ cup coconut yogurt Use thick Greek-style yogurt if possible, see note*.
  • 6 Tablespoons maple syrup
  • 1 lime juiced
  • 8 fresh basil leaves
  • Cacao nibs optional, for garnish

Instructions 

  • In a blender, blitz watermelon, maple syrup, lime juice, and salt. Divide into the popsicle molds, leaving about an inch unfilled on top. Freeze while preparing other ingredients.
  • In a small blender, combine yogurt, maple syrup, and lime juice. Give a quick blend or mix with a spoon. Scoop the mixture (about 2 teaspoons) and gently arrange it into the popsicle mold over the watermelon layer. Freeze while preparing the green layer.
  • Add basil to the remaining yogurt mixture and blend until smooth. Gently arrange it over the yogurt layer. Cover and insert popsicle sticks. Freeze until sold, about 4 hours to overnight.
  • Run the mold under water for 5-10 seconds to help release the popsicle. Remove from the mold. Sprinkle cacao nibs and enjoy.
