Creamy Peanut Butter Oat Popsicles with Chocolate (Vegan)

These Healthy Peanut Butter Oat Popsicles are creamy and delicious summer frozen treats with a satisfying crunch from chocolate and peanuts.

Ingredients
  

For the popsicle

  • 1 cup oat milk
  • 6 Tablespoons maple syrup
  • 6 Tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • Pinch sea salt

For the chocolate shell

  • ¼ cup chocolate chips
  • 2 teaspoons coconut oil
  • 1 Tablespoon peanuts toasted and finely chopped

Instructions
 

  • Make the popsicles: In a high-speed blender, add milk, maple syrup, peanut butter, vanilla extract, and salt. Blend until smooth. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze overnight.
  • Make the chocolate shell: In a small microwave-safe bowl, combine chocolate chips and oil. Microwave for 30 seconds. Mix together to combine. Microwave longer if necessary, 15 seconds at a time, until smoothly combined.
  • Run the bottom of the mold under the running water for 5-10 seconds to help release the popsicle. Remove from the mold. Drizzle or dip the tip into chocolate and sprinkle peanuts. Freeze to set the shell. Enjoy!
