Easy Homemade Strawberry Ice Cream(Dairy-Free and Eggless)

This Homemade Strawberry Ice Cream is so rich and creamy without any dairy or eggs. You can easily make this strawberry ice cream recipe with an ice cream maker and only need a handful of ingredients. This is an easy vegan summer dessert to enjoy under the sun by the pool or at your next BBQ party.

Why You’ll Love This Recipe

My number one ice cream choice is always strawberry. Anything strawberry is something I can’t pass by. Early this summer, I became obsessed with a strawberry parfait from a local ice cream shop. It had strawberry ice cream, strawberry topping, and a generous mountain of whipped cream. The only downside was that it was a seasonal item, which broke my heart.

This inspired me to create my own strawberry ice cream, but without eggs and dairy. This means no cooking is required, making it easy to prepare. Plus, too much dairy makes me break out anyway. Creating vegan ice cream allows me to enjoy dessert without guilt.

I hope you like the idea of egg-free, dairy-free ice cream and starting your own ice cream parlor at home. If you have a freezer bowl ready for your ice cream machine (my Cuisinart freezer bowl is always kept in my freezer), making ice cream at home is quick and easy, especially if you like soft serve.

The Ingredients of Homemade Strawberry Ice Cream

You only need a handful of ingredients for this easy dessert recipe!

  • Strawberries: Hulled and quartered. Blend into the ice cream and also add chunks for extra flavor and texture.
  • Cashews: I love making this recipe using raw cashews. When you use raw cashews, soak them for 3 hours before use. Soaking reduces phytic acid in nuts and improves nutrient absorption. Keep them in the fridge when it’s warm. Rinse and drain well before use. You can also use roasted cashews. In this case, soaking helps soften the nuts and blend smoother. In a pinch, you can boil cashews for 15 minutes to soften.
  • Coconut Milk: Use full-fat and unsweetened kind.
  • Maple syrup: You can also use other like honey or agave syrup.
  • Vanilla Extract and Sea Salt: boost of flavor.

How to Make Ice Cream from Scratch

For this recipe, you’ll need

  • High-speed blender(I use my Vitamix blender)
  • Ice cream maker(You don’t need a fancy one. A basic one is more than enough! I use a Cuisinart Ice Cream Maker Machine with 1.5 Quart capacity freezing bowl.)

Firstly, making ice cream starts from the day before. Your ice cream maker’s freezing bowl must be completely frozen and it typically requires at least 16 to 24 hours before use, depending on your machine. So, freeze the bowl of ice cream maker according to the manufacturer’s instructions.

Then soak the cashews. They need to be soaked at least 3 hours before use. I like soaking overnight in the fridge. Then rinse and drain well before use. You can also use roasted cashews. In this case, soaking still helps by softening the nuts and blending smoother. If you don’t have time, you can boil cashews for 15 minutes to soften.

Lastly, for the preparation, place a loaf pan in a freezer just before start making ice cream.

Next, in a high-speed blender, add all the ingredients of ice cream. Blend until smooth.

Pour the strawberry mixture into the prepared ice cream maker. Freeze according to the manufacturer’s instructions until soft serve consistency. Add chopped strawberry to mix in. You can serve this now as a soft serve.

For a more solid ice cream texture, freeze it before enjoying it. Transfer the soft serve to the cold loaf pan.

Flatten the surface with a spatula. Cover and freeze until solid, about 3 hours. Scoop and enjoy.

If you’re enjoying leftover ice cream the other day, keep it in the freezer. Remove from the freezer 10 minutes before enjoying to soften a little bit to scoop smoothly.

For the Ice Cream

  • 1 cup strawberries hulled and quartered
  • 1 cup raw cashews soaked for 3 hours. Rinse and drain well
  • 1 cup coconut milk full-fat and unsweetened
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • A pinch sea salt

Mix-in

  • ½ cup strawberries chopped

Instructions
 

  • Freeze the bowl of ice cream maker a day before. Place a loaf pan in a freezer before start making ice cream.
  • In a high-speed blender, add all the ingredients of ice cream. Blend until smooth.
  • Pour the strawberry mixture into the prepared ice cream maker. Freeze according to the manufacturer’s instructions until soft serve consistency. Add chopped strawberry to mix in. You can serve this now as a soft serve.
  • Transfer the soft serve to the cold loaf pan. Cover and freeze until solid, about 3 hours. Scoop and enjoy. Keep it in the freezer and remove from the freezer 10 minutes before enjoying to soften a little bit to scoop smoothly.
