Easy Apple Pie Spring Rolls with Healthy Cinnamon Sugar(Vegan)

Apple Pie Spring Rolls, or Apple Pie Spring Rolls, is a vegan and healthy treat that transforms classic apple pie into an easy snack recipe! These sweet dessert spring rolls are filled with gooey apple cinnamon filling and wrapped in a crispy spring roll wrapper. When dusted with refined sugar-free cinnamon sugar made with coconut sugar and served with date caramel sauce, it’s perfect for a satisfying fall snack.

As the temperature drops in the fall season, I crave a freshly baked warm apple pie so bad! If you’re craving an apple pie like me but don’t quite have the time and energy to bake one from scratch, try this easy spring roll recipe. You can enjoy the taste of apple pie without the hassle of actually baking it.

And serving with sweet dipping sauce for spring rolls, like this homemade healthy Date Caramel Sauce, is the perfect snack combination to satisfy your fall sweet craving!

Ingredients

For Apple Pie Filling

  • Apple – You can use any apples you have in your kitchen. The apples in the photo are Lucy Glo apples which have beautiful marbled pink flesh inside!
  • Lemon – Scrub well to use zest and juice. Lemon juice enhances the flavor of apples.
  • Maple Syrup – You can alternatively use natural sweeteners like honey or agave syrup.
  • Cinnamon – Makes this recipe taste like apple pie! I like using Ceylon cinnamon for its sweet flavor.
  • Nutmeg – Optional but add depth to the flavor.
  • Arrowroot Starch – Make the filling thick.

For Assembly

  • Spring Roll Wrappers – Use spring roll wrappers or egg roll wrappers depending on your preference. Spring roll wrappers are crispy, and egg roll wrappers create a crispy yet chewy texture. Some spring roll wrappers and egg roll wrappers can made with eggs. So check the ingredient label to avoid eggs if you want to make this recipe vegan.
  • Arrowroot Starch – Use as glue for spring roll wraps.

For Serving

  • Cinnamon Sugar – Use a store-bought one or make a healthier one with coconut sugar and cinnamon powder.
  • Caramel Sauce – Use your favorite caramel sauce for dipping or homemade Date Caramel Sauce.

How to Make Apple Pie Spring Rolls

Let’s start with making easy vegan apple pie filling.

Core and dice the apple. In a saucepan, add the apple, zest and juice of lemon, maple syrup, and a pinch of salt. Cover and cook over medium heat until soft, for 10 minutes. Reduce the heat to low if necessary to maintain a gentle simmer.

Uncover and stir in cinnamon and nutmeg. Cook uncovered for 5 minutes until the mixture thickens slightly, stirring often.

In a small bowl, whisk together ½ teaspoon of arrowroot starch and 1 teaspoon of water to make a slurry. Stir it into the apple mixture and cook until thickens. Remove from the heat and let cook completely.

Next, wrap the filing in a spring roll wrapper.

In another small bowl, whisk together 1 teaspoon of arrowroot starch and ½ teaspoon of water. Use this as a glue to stick the end of the spring roll wrapper.

Divide the filling into 6 parts. Place a wrapper on a work surface and arrange apple filling on the wrapper. Wrap the filling and seal the ends the with arrowroot mixture.

In a pan, heat the olive oil over medium heat. Shallow fry spring rolls until golden brown, for about 5 minutes, flipping halfway.

Sprinkle cinnamon sugar and serve with Date Caramel Sauce.

How to Make Sugar-Free Cinnamon Sugar – Combine 4 teaspoons of coconut sugar and 1 teaspoon of ground cinnamon.

  • ½ teaspoon water divided
  • Extra virgin olive oil for frying
  • Cinnamon sugar for serving
  • Caramel sauce for serving
