Easy Apple Pie Spring Rolls with Healthy Cinnamon Sugar(Vegan)

Ingredients
 
 

For filling

  • 1 apple chopped
  • ¼ lemon zested and juiced
  • ¼ cup maple syrup
  • A pinch sea salt
  • ½ teaspoon ground cinnamon
  • Dash ground nutmeg optional
  • ½ teaspoon arrowroot starch
  • 1 teaspoon water

For Assembly

  • 6 spring roll wrappers
  • 1 teaspoon arrowroot starch divided
  • ½ teaspoon water divided
  • Extra virgin olive oil for frying
  • Cinnamon sugar for serving
  • Caramel sauce for serving

Instructions
 

  • In a saucepan, add apple, lemon zest and juice, maple syrup, and a pinch of salt. Cover and cook over medium heat until soft, for 10 minutes. Reduce the heat to low if necessary to maintain a gentle simmer. Uncover and stir in cinnamon and nutmeg. Cook uncovered for 5 minutes until the mixture thickens slightly, stirring often.
  • In a small bowl, whisk together ½ teaspoon of arrowroot starch and 1 teaspoon of water. Stir it into the apple mixture and cook until thickens. Remove from the heat and let cook completely.
  • In another small bowl, whisk together 1 teaspoon of arrowroot starch and ½ teaspoon of water. Divide the filling into 6 parts. Place a wrapper on a work surface and arrange apple filling on the wrapper. Wrap the filling and seal the ends the with arrowroot mixture.
  • In a pan, heat the olive oil over medium heat. Shallow fry spring rolls until golden brown, for about 5 minutes, flipping halfway.
  • Sprinkle cinnamon sugar(*see note 1) and serve with caramel sauce.

note 1 - How to Make Sugar-Free Cinnamon Sugar: Combine 4 teaspoons of coconut sugar and 1 teaspoon of ground cinnamon.
