From August 1st, I immediately start dreaming about anything fall: crisp air, golden leaves, cozy blanket, caramel apple, and anything pumpkin spice! And the homemade pumpkin spice syrup is better than Starbucks syrup (and cost-effective). Ingredients and Substitutions

- Pumpkin Puree - It gives a cleaner, richer, more wholesome flavor and nutrients than flavor-only syrups. Make sure to use pumpkin puree and not the pumpkin pie filling.
- Maple Syrup - Maple syrup adds a warm pancake-like flavor to the syrup! That's why a lot of people make "pancake" latte online with maple syrup. It's what makes this syrup extra cozy and delicious! You can also use other natural sweeteners like honey, coconut sugar, or agave syrup, as each brings slightly different flavors.
- Pumpkin Pie Spice - Brings autumn vibes!
- Vanilla Bean Paste - Vanilla flavor is optional. When using, I like the vanilla bean paste over the extract, as it has a more intense flavor.
What to do if I don't have pumpkin pie spice? - Pumpkin pie spice is a blend of warm spices traditionally used for flavoring pumpkin pie. It's typically made of cinnamon, ginger, nutmeg, and cloves, and sometimes allspice. If you're in a pinch, you can make your own by mixing cinnamon with any or all of the other spices you have on hand.
Instructions for Pumpkin Spice Syrup

- In a saucepan, combine pumpkin puree, maple syrup, water, spice, and salt. Bring it to a boil. Reduce the heat to low and simmer for 10 minutes. If the syrup is cooked too thick and looks thick, add a splash of water.

- Remove from the heat and stir in vanilla paste. Let cool completely.

- Add 2-3 tablespoons to each drink, like a latte or cold brew. Store the syrup in an airtight container in the refrigerator. Shake well before each use.
Tip: The syrup is smooth enough to use in drinks. But if you want to take an extra step to make it even silkier, strain the syrup through the cheesecloth or a fine mesh strainer to remove any fiber left in the syrup.
Ways to Enjoy Your Pumpkin Spice Syrup Beyond Coffee
This delicious fall-flavored syrup is not just for lattes!
- Lattes - Add 2 tablespoons to your favorite latte. Adjust the amount of syrup to your liking!
- PSL - Never sleep on the homemade pumpkin spice latte! My go-to recipe is 2 tablespoons of the syrup, 2 shots of espresso, ½ cup of milk, and a lot of ice.
- Cold Brew - Add 2 tablespoons to 1 cup of cold brew.
- Cold Foam - Combine 3 tablespoons of heavy cream, 2 tablespoons of milk, and 1 tablespoon of the syrup. Froth with a hand-held frother or shake in a jar until foamy. If you like cold foam, also try Pumpkin Cream Cold Foam Cold Brew and Blueberry Latte with blueberry cold foam!
- Matcha - Sift 1 teaspoon of matcha, add ¼ cup hot water, and whisk. In a glass, add 2 tablespoons of the syrup, ½ cup of milk, ice cubes, and the prepared matcha! So good! Pouring pumpkin cold foam on top is also delish!
- Pancakes - This recipe is basically pumpkin-spiced maple syrup. So drizzling over pancakes makes perfect sense!
- Yogurt - I love adding a drizzle of pumpkin spice syrup to my breakfast yogurt bowl. It instantly transforms it into a taste of fall.
