Why You’ll This Recipe
I’m obsessed with the combination of matcha and strawberry flavors. Iced Strawberry Matcha Latte and Strawberry Matcha Latte Smoothie are a few examples! Sweet and refreshing strawberry and bold-tasting matcha are such an irresistible combination.
Inspired by Italian affogato, I put a strawberry-matcha flavor combo into a luscious dessert! The affogato is easy to make and this is a wellness version of it made with antioxidant-rich matcha and my dairy-free Homemade Strawberry Ice Cream. Adding homemade strawberry ice cream topping makes simple affogato so luscious and indulging.
The Ingredients
- Strawberry or Vanilla Ice Cream: You can use vanilla ice cream for regular matcha affogato or strawberry ice cream to make it extra strawberry flavor. I used my dairy-free and eggless Homemade Strawberry Ice Cream to make this afforgato.
FOR STRAWBERRY ICE CREAM TOPPING
- Strawberries: Use fresh, ripe strawberries. Washed well, hulled, and chopped.
- Maple Syrup: Adds sweetness and moisture.
FOR MATCHA
- Matcha: Use high-quality ceremonial-grade matcha powder that has a vibrant green color and rich umami taste, and it should never taste too grassy or even dull. The quality of matcha affects the taste. I love and trust the matcha from Ippodo!
- Hot water: When making matcha, the key is to avoid boiling water. Boiling water ruins the flavor of matcha even though you use a good matcha. Use 176°F (80°C) water for the best result. After boiling your water, transfer it to an empty cup. It helps cool down hot water a little bit to the ideal temperature for matcha making. Then add to matcha to whisk.
How to Make Homemade Strawberry Ice Cream Topping
Make strawberry topping: In a saucepan, add strawberries and maple syrup. Cover and cook over medium heat until soft, for about 3-5 minutes. Remove from the heat and let cool.
This recipe makes enough for two people.
How to make Matcha Affogato
Next, let’s prepare the matcha. The tip for making good matcha is not to use boiling water. The boiling water is too hot for making matcha and going to ruin the taste and flavor of matcha. The fresh hot water around boiling temperature brings out the bitterness of matcha. So use 80°C or 176°F water for the best result. Transfer boiling water to an empty cup to cool a little bit, and then add to matcha.
In a matcha bowl, sift in matcha powder. Pour hot water over it and whisk vigorously with a bamboo whisk. You’ll get frothy and smooth matcha.
To assemble, add the ice cream to two dessert glasses. Divide matcha into glasses and top with strawberry topping. Enjoy immediately.
