In my opinion, the flavors of popsicles are roughly divided into 2 groups: fruity and creamy. The fruity pops are mainly made with fruits and have a refreshing flavor. like orange, berries, watermelon, and mango flavors. The creamy ones are dairy or cream-based rich-tasting ones like vanilla and Chocolate Popsicles.

Have you ever experienced that you can’t decide if you want fruity or creamy? These popsicles combine the best of both worlds. Refreshingly fruity mango popsicles are frozen together with rich and creamy matcha latte parts.

Making popsicles is easier than ice cream

Popsicles are generally easier to make than ice cream. To make ice cream, you need an ice cream maker to create a creamy and smooth texture. But in the case of making popsicles, you just need a popsicle mold, which you can get at a relatively affordable price(check out Amazon!).

Mango’s sweetness and lime’s tangy flavor are perfect for pick-me-up under the summer heat!

Non-dairy Matcha Latte Popsicles

Creamy ice cream can be made without dairy. Cashews and coconut milk make this matcha latte part of the popsicles so creamy.

You can double the recipe of a mango portion or matcha latte portion to create single-flavored popsicles. But this flavor combination is unmatched and you’ll love both together!

Ingredients Mango Popsicles Part

  • Frozen Mango chunks: Fresh mangoes are affordable and convenient. They’re pre-cut and frozen, so you can just throw them into blenders. You can also use fresh mangoes instead. In that case, peel, remove seeds, and cut into chunks before blending.
  • Lime: Lime juice adds a satisfying tang to enhance the sweetness of mangoes. Use freshly squeezed lime juice whenever possible.
  • Maple Syrup: Maple syrup adds wholesome sweetness to the popsicles.

Ingredients of Matcha Latte Popsicles Part

  • Cashews: I recommend using raw cashews for this recipe as roasted cashews add too much toasty flavor. When using raw cashews, soak them for 3 hours and drain well, making them easier to digest and blend. If you don’t have time to soak, boil them for 15 minutes, drain, and rinse under the running water. Drain well before adding the blender.
  • Coconut milk: Creamy base for the matcha latte popsicles.
  • Matcha Powder: I recommend using ceremonial-grade matcha. High-quality matcha has a vibrant green color and rich umami.
  • Vanilla Extract and Sea Salt: Adds a boost of flavor.

Step by Step Instructions

Firstly, we’re going to make a mango popsicle layer.

In a high-speed blender, blitz mangos, lime juice, water, and maple syrup until smooth. Divide equally into 5 popsicle molds. Set aside.

Clean the high-speed blender and blitz cashews, coconut milk, maple syrup, matcha, vanilla extract, and salt until smooth. Pour into 5 popsicle molds over the mango mixture until the mold is filled. Cover and insert popsicle sticks. Freeze overnight.

When removing popsicles from the mold, run the mold under water for a few seconds to help release the popsicle. Popsicle should come right out from the mold. Enjoy!

Ingredients
 
 

For Mango Popsicles

  • ½ cup frozen mango chunks
  • ½ lime juiced
  • 2 Tablespoons water
  • 1 Tablespoon maple syrup

For Matcha Latte popsicles

  • ¼ cup raw cashews soaked for 3 hours and drain well
  • ½ cup full-fat coconut milk
  • 3 Tablespoons maple syrup
  • ½ Tablespoon matcha powder add up to 1 tablespoon for your desired matcha-ness
  • ½ teaspoon vanilla extract
  • Pinch Sea salt

Instructions
 

  • In a high-speed blender, blitz mangos, lime juice, water, and maple syrup. Divide equally into 5 popsicle molds. Set aside.
  • Clean the high-speed blender and blitz cashews, coconut milk, maple syrup, matcha, vanilla extract, and salt until smooth. Divide into 5 popsicle molds over the mango mixture until the mold is filled. Cover and insert popsicle sticks. Freeze overnight.
  • Run the mold under water for a few seconds to help release the popsicle. Remove from the mold and enjoy.
