Ingredients for Cinnamon Roll Overnight Oats
- Rolled oats – I use old-fashioned rolled oats for this recipe. Some oats are not processed in gluten-free facilities, so make sure to use the one with a certified gluten-free label on the package if you’re sensitive or allergic to gluten.
- Chia seeds – Chia seeds are optional but highly recommended! They thicken up like a creamy gel while soaking and add a fun crunchy texture. And these small seeds carry surprisingly high nutrients.
- Hemp Seeds – Adding hemp seeds is also optional. Hemp seeds nicely blend in oats and add extra nutrients.
- Medjool Dates – Soaking chunks of dates add natural sweetness and a chewy and gooey texture like real cinnamon rolls.
- Ground Cinnamon – No cinnamon roll complete without cinnamon powder! Add more or less for your desired cinnamon-ness!
- Oat Milk or any milk of your choice – Dairy or non-dairy, use your favorite milk and it’ll work perfectly fine.
- Maple syrup – Boost the sweetness. Honey or coconut sugar will also work. You can omit the maple if you desire to go with just the sweetness from the dates.
- Vanilla extract – it makes the oats taste like cinnamon rolls.
How to Make Easy Overnight Oats
Let’s start with making the overnight oats base!
Gather the ingredients. Remove the seeds from the Medjool dates and chop them into small chunks. They are sticky so be careful.
In a clean jar or bowl, stir together oats, chia seeds, hemp seeds, dates, cinnamon, milk, maple syrup, and vanilla. The date chunks tend to stick together so mix well to evenly distribute them.
Refrigerate overnight for the best result. In a rush, soak until the mixture gets creamy consistency, for at least 2 hours.
How to make Cinnamon Swirl Topping
For the frosting of this healthy breakfast cinnamon roll, you’ll need plain coconut yogurt! It adds a creamy and tangy flavor to this recipe. Using Greek-style yogurt is the best for thick and rich frosting, but regular ones will also work.
If you’re not sensitive to dairy, you can also use regular Greek yogurt, Skyr, or any plain yogurt. You can also use vanilla-flavored yogurt.
Now for the fun part, making the Cinnamon Swirl! This is what makes this cinnamon roll overnight oats recipe so special and fun.
In a small bowl, add almond butter, maple syrup, and cinnamon powder, and give it a good stir. Use creamy almond butter otherwise the chunks of almonds will stuck while piping. If you want to go nut-free, use sunflower butter instead.
Now we want to pipe this cinnamon swirl cream into an actual swirl on the yogurt frosting.
Transfer the cream to a small, sealable, heavy-duty plastic bag. Squeeze out excess air and seal the bag.
Twist the top to put the pressure on the mixture, so that it actually starts to look like a piping bag. Snip a small hole in the corner of the bag for piping.
Gently squeeze and draw a swirl on the yogurt frosting. The key is to be nice and slow! The amount of cream is enough for making 3-4 swirls. So you can make this recipe in batches or practice the swirl on parchment paper before trying on the frosting.
Extra Topping and Mix-in Suggestion
- Nuts: Since the overnight oats and the topping are both soft and creamy, adding some satisfying crunch is a great idea. Add pecans, walnuts,
- Seeds: Like nuts, seeds also add a nice crunch to this recipe. Try topping with pumpkin seeds, sunflower seeds, or even cacao nibs if you want a chocolaty cinnamon roll flavor.
- Fruits: If you love adding fruits to your breakfast, this overnight oats is a great place to do so. My suggestion is to add a handful of fruits that go well with cinnamon, like apples, pears, and persimmon.

The recipe measurements of the overnight oats is just for 1 person/serving. So multiply the recipe to satisfy your and your family’s needs. You can make individual jars of overnight oats or a big bowl of it to divide in the morning.
You can use creamy nut butter like cashew, pecan, or walnut butter. If you want to make it nut-free, use sunflower seed butter. I don’t recommend using peanut butter as the flavor of the peanuts is overpowering.
