Apple Pie Overnight Oats
Creamy Overnight Oats topped with juicy, cinnamon-y cooked apples that taste just like apple pie filling and crushed pecan for the satisfying crunch.
Ingredients
- 1 apple chopped
- 2 Tablespoons maple syrup
- 2 Tablespoons lemon juice
- Dash cinnamon
- A pinch sea salt
- ¼ cup pecans crushed
For each jar:
- ⅓ cup oats
- ½ cup oat milk
- 1 Tablespoon chia seeds
- 1 Tablespoon hemp seeds
- ½ Tablespoon maple syrup
Instructions
- In a saucepan, add apple, lemon juice, maple syrup, cinnamon, and salt. Cover and cook over medium heat until soft, for 10-15 min, stirring occasionally. Reduce the heat to low if necessary to maintain a gentle simmer. Remove from the heat and let cool.
- In two serving jars, stir together oats, oat milk, chia seeds, hemp seeds, and maple syrup. Divide cooked apples and pecans into the jars. Refrigerate overnight.
- Enjoy in the morning! It can be enjoyed both cold or warm.
