In a saucepan, add apple, lemon juice, maple syrup, cinnamon, and salt. Cover and cook over medium heat until soft, for 10-15 min, stirring occasionally. Reduce the heat to low if necessary to maintain a gentle simmer. Remove from the heat and let cool.
In two serving jars, stir together oats, oat milk, chia seeds, hemp seeds, and maple syrup. Divide cooked apples and pecans into the jars. Refrigerate overnight.
Enjoy in the morning! It can be enjoyed both cold or warm.
