Apple Pie Overnight Oats

Creamy Overnight Oats topped with juicy, cinnamon-y cooked apples that taste just like apple pie filling and crushed pecan for the satisfying crunch.

Ingredients
 
 

  • 1 apple chopped
  • 2 Tablespoons maple syrup
  • 2 Tablespoons lemon juice
  • Dash cinnamon
  • A pinch sea salt
  • ¼ cup pecans crushed

For each jar:

  • cup oats
  • ½ cup oat milk
  • 1 Tablespoon chia seeds
  • 1 Tablespoon hemp seeds
  • ½ Tablespoon maple syrup

Instructions
 

  • In a saucepan, add apple, lemon juice, maple syrup, cinnamon, and salt. Cover and cook over medium heat until soft, for 10-15 min, stirring occasionally. Reduce the heat to low if necessary to maintain a gentle simmer. Remove from the heat and let cool.
  • In two serving jars, stir together oats, oat milk, chia seeds, hemp seeds, and maple syrup. Divide cooked apples and pecans into the jars. Refrigerate overnight.
  • Enjoy in the morning! It can be enjoyed both cold or warm.
