- Matcha: I recommend using an affordable ceremonial-grade matcha. It has a great balance of flavor and price.
- Banana: Use ripe bananas for extra sweetness and creamy texture.
- Lite coconut milk: Using lite coconut milk gives a creamy texture. Coconut oil in full-fat milk can solidify in the fridge. You can also use other milks like oat, almond, and whole milk.
- Maple Syrup: or other sweetener of your choice.

How to Make Banana Matcha Chia Pudding

- In a blender, combine the banana, matcha, coconut milk, maple syrup, and salt. Blend until smooth. Matcha powder can stick to the sides, so scrape down the sides if needed.

- Transfer the mixture to a bowl or container, and add the chia seeds. Stir until fully combined, making sure to scrape the sides and bottom where chia seeds can clump. Let it sit for 5 minutes, then stir again to even out the texture. Cover and refrigerate for at least 2 hours or overnight.

- When you're ready to serve, top with your favorite fruit, yogurt, nuts, or a drizzle of maple syrup.
Tip: If you accidentally used canned, full-fat coconut milk, the pudding might harden as the coconut oil solidifies in the fridge. In that case, let it sit at room temperature for 5-10 minutes to soften before enjoying.
Best Matcha for Chia Seed Pudding
I recommend using an affordable ceremonial-grade matcha for this chia seed pudding recipe.
High-quality, ceremonial-grade matcha usually tastes clean and umami-forward. When it's mixed with banana coconut milk, its delicate and subtle flavor can easily be overpowered by strong tropical flavors. It's such a waste of precious matcha!
However, I don't recommend using culinary-grade matcha or anything below for this recipe. While the culinary-grade matcha is great for baking, it usually tastes too grassy, and it's not very pleasantly fragrant when not baked. The color tends to be also dull.
Affordable ceremonial-grade matcha is a great balance. It creates a fragrant, vibrant green matcha, while the strong flavor holds up well in banana and coconut chia pudding.
How to Prevent Clumpy Chia Pudding
For the smoothest texture, stir the chia pudding well right after mixing, then stir again after 5 to 10 minutes. This helps prevent the chia seeds from settling and clumping together.
Chia seeds can clump up on the bottom and corners of the container. So make sure to scrape down on those areas.
