Ingredients of Spicy Udon Noodles

Most of the ingredients are pantry freezer staples.

  • Frozen Udon Noodles: Most of the frozen udon noodles are precooked and frozen when it’s most fresh and delicious, and all you need to do is cook them for a few minutes to bring them to life and al dente. They’re great frozen items to keep in your freezer to add to countless easy and quick meals. You can find them in the frozen section at the Asian grocery store.
  • Chickpea: Canned chickpeas are your best friend.
  • Chili Crunch: Big flavor in a jar. It adds spiciness and a nice crunch from onion and garlic. The most famous product I believe is Chili Crunch from Momofuku. Trader Joe’s has one called Chili Onion Crunch. Other brands make their own, so your grocery store should have some variation of it.
  • Soy Sauce: Adds umami.
  • White Sesame Seeds, Scallions, and Fresh Cilantro: for garnish.

How to Make 5 minutes Noodles

Here is how to make spicy udon noodles under 5 minutes using chili crunch.

First, open a can of chickpeas and rinse under the running water.

Next, cook frozen udon noodles. We’re also going to cook chickpeas with udon noodles to warm them up. You have two options: microwave and boiling.

Microwave Method

Usually, a block of frozen udon noodles is individually wrapped in plastic wrap. Remove the wrapping from the frozen udon noodles. In a heat-proof bowl, add the frozen udon and chickpeas. Cover and microwave until tender, about 3 minutes. Drain water or transfer just the noodles and chickpeas to another bowl.

Boiling method

Cook the frozen noodles according to the package instructions. Usually, it needs to be cooked for 1 minute in a large pot full of boiling water to defrost. Add chickpeas together to warm up.

Assembly

Add scallions, chili crunch, and soy sauce and mix well. Top with sesame seeds and cilantro and enjoy!

Serving Suggestions
