Healthy Watermelon Lime Popsicles (With Basil Yogurt Rind)
The watermelon lime popsicles are made with sweet watermelon and refreshing lime with a pinch of salt and keep you hydrated all summer long.

For Watermelon Part
- 3 cup chopped watermelon
- ¼ cup maple syrup
- 2 limes juiced
- Pinch salt
For the rind
- ½ cup coconut yogurt Use thick Greek-style yogurt if possible, see note*.
- 6 Tablespoons maple syrup
- 1 lime juiced
- 8 fresh basil leaves
- Cacao nibs optional, for garnish
In a blender, blitz watermelon, maple syrup, lime juice, and salt. Divide into the popsicle molds, leaving about an inch unfilled on top. Freeze while preparing other ingredients.
In a small blender, combine yogurt, maple syrup, and lime juice. Give a quick blend or mix with a spoon. Scoop the mixture (about 2 teaspoons) and gently arrange it into the popsicle mold over the watermelon layer. Freeze while preparing the green layer.
Add basil to the remaining yogurt mixture and blend until smooth. Gently arrange it over the yogurt layer. Cover and insert popsicle sticks. Freeze until sold, about 4 hours to overnight.
Run the mold under water for 5-10 seconds to help release the popsicle. Remove from the mold. Sprinkle cacao nibs and enjoy.
