For the Salad
- Champagne Mango: Mangoes are in peak season in summer. But champagne mangoes are getting in the season a little bit earlier than other mangoes. They’re in season from February to early August. So use ripe, sweet champagne mangoes while they’re in season! You can alternatively use Kent or red mangoes.
- Persian Cucumber: Persian cucumbers are small, tender cucumbers. You can use ½ English cucumber instead.
- Red Onion: Adds a mild spicy taste to the salad. Chop up the onion and let sit on the countertop for 15 minutes to soften the spiciness.
- Arugula: Peppery flavor paired well with sweet fruits. You can alternatively use fresh mixed greens.
- Avocado: Adds creamy texture to the salad.
- Blueberries: Add extra sweetness and juiciness.
- Walnuts: Toast the walnuts to golden brown to add rich nutty flavor and crunchy texture to the salad.
- Cilantro: Add extra refreshing flavor.

Ingredients
- 1 champagne mango peeled, seeded, and diced
- 1 Persian cucumber diced
- ¼ red onion minced and let sit for 15min
- 3 cups arugula
- 1 avocado chopped
- ½ cup blueberries
- ¼ cup walnuts toasted
- ¼ cup cilantro
For the Cilantro Lime Vinaigrette
- 2 Tablespoons lime juice
- 1 teaspoon maple syrup
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon fresh cilantro chopped
- 1 teaspoon garlic powder
- A pinch sea salt
- A dash freshly cracked black pepper
Instructions
- In a small jar or bowl, whisk together all the ingredients of the vinaigrette.
