This Mango Cucumber Salad with Blueberries and Avocado combines ripe mangoes and hydrating cucumbers which are everything you want for a summer salad. Sweet and juicy mangoes and blueberries, crunchy cucumbers, and creamy avocado are assembled together on the bed of a peppery arugula. They’re all dressed together with the sweet and tangy Cilantro Lime Vinaigrette.

I truly believe that fruit makes salad the star of the table and even makes salad haters fall in love. And mangoes capture sunshine and bring tropical summer flavor to the salad! And the bright yellow hue brightens up the table.

The Cilantro Lime Vinaigrette is easy to assemble, requiring no special equipment. Unlike regular vinaigrette recipes, this recipe calls for lime juice instead of lemon juice, making it a light and bright dressing that combines the flavor of juicy summer fruits together.

Bring this mango cucumber salad to your next summer BBQ or home gathering. Sweet and mildly tangy salad is perfectly refreshing and hydrating to enjoy under the hot summer heat.

The Ingredients

For the Salad

  • Champagne Mango: Mangoes are in peak season in summer. But champagne mangoes are getting in the season a little bit earlier than other mangoes. They’re in season from February to early August. So use ripe, sweet champagne mangoes while they’re in season! You can alternatively use Kent or red mangoes.
  • Persian Cucumber: Persian cucumbers are small, tender cucumbers. You can use ½ English cucumber instead.
  • Red Onion: Adds a mild spicy taste to the salad. Chop up the onion and let sit on the countertop for 15 minutes to soften the spiciness.
  • Arugula: Peppery flavor paired well with sweet fruits. You can alternatively use fresh mixed greens.
  • Avocado: Adds creamy texture to the salad.
  • Blueberries: Add extra sweetness and juiciness.
  • Walnuts: Toast the walnuts to golden brown to add rich nutty flavor and crunchy texture to the salad.
  • Cilantro: Add extra refreshing flavor.

For the Cilantro Lime Vinaigrette

  • Lime Juice: Use freshly squeezed lime juice.
  • Maple Syrup: Adds a wholesome sweetness to the dressing.
  • Extra Virgin Olive Oil: Use high-quality oil for the best result.
  • Cilantro: Chopped cilantro adds extra flavor to the vinaigrette.
  • Garlic Powder, Sea Salt, and Black Pepper: Adds flavor.

How to make Mango Cucumber Salad

First, let’s make the Cilantro Lime Vinaigrette!

In a small jar or bowl, whisk together lime juice, maple syrup, olive oil, cilantro, garlic powder, salt, and pepper.

Use a whisk to mix together. Or if you’re using a jar, secure the lid and shake well.

In a bowl, add mango, cucumber, onion, arugula, avocado, blueberries, walnuts, and cilantro.

The vegetables and fruits are assembles in a bowl.

Drizzle the dressing over the salad and toss. Enjoy!

Substitutions

This salad recipe is quite forgiving and adaptable. So you can substitute with veggies and fruit you have in your fridge.

But I highly recommend not omitting the mangoes. If champagne mangoes are not in season, you can also use Kent or red mangoes.

You can use raspberries, blackberries, or strawberries instead of blueberries. Use some berries plentiful in your garden.

Mix greens also work instead of arugula.

Ingredients
 
 

  • 1 champagne mango peeled, seeded, and diced
  • 1 Persian cucumber diced
  • ¼ red onion minced and let sit for 15min
  • 3 cups arugula
  • 1 avocado chopped
  • ½ cup blueberries
  • ¼ cup walnuts toasted
  • ¼ cup cilantro

For the Cilantro Lime Vinaigrette

  • 2 Tablespoons lime juice
  • 1 teaspoon maple syrup
  • 3 Tablespoons extra virgin olive oil
  • 1 Tablespoon fresh cilantro chopped
  • 1 teaspoon garlic powder
  • A pinch sea salt
  • A dash freshly cracked black pepper

Instructions
 

  • In a small jar or bowl, whisk together all the ingredients of the vinaigrette.
  • In a bowl, add mango, cucumber, onion, arugula, avocado, blueberries, walnuts, and cilantro. Drizzle the dressing over the salad and toss. Enjoy!
