Ingredients
  

  • ½ cup cooked brown rice
  • 1½ Tbsp. kimchi (I used vegan kimchi) chopped
  • ½ tsp. toasted sesame oil
  • ½ tsp. gluten free tamari
  • ½ tsp. maple syrup
  • ¼ tsp. toasted white sesame seeds
  • ½ nori sheet plus more for eyes
  • ½ radish thinly sliced
  • Sea salt to taste

Instructions
 

  • In a bowl toss rice, kimchi, oil, tamari, maple syrup, and sesame seeds. Add salt to taste. Shape the rice into a ball. Use a spatula to shape two ears.
  • Place a nori sheet on a work surface with a shiny side down. Place the rice ball in the bottom center. Give small cuts on the side and top of the nori sheet and wrap up. Wrap in cling wrap to help the nori sheet soften.
  • Cut out radish into 2 rounds for eyes, 2 triangles for ears, and 4 thin strips for whiskers. Unwrap the cling wrap and decorate the cat's face.
