Halloween Frankenstein Onigiri with Matcha and Black Olive

Wellness rice balls made with matcha, and its eyes are shining red with goji berries. Perfect for Halloween!!

Ingredients
  

  • ½ cup cooked brown rice
  • 1 tsp. rice vinegar
  • ½ tsp. extra virgin olive oil
  • ¼ tsp. matcha
  • Pinch sea salt
  • 4 pitted black olives
  • 1 walnut crushed
  • 6 goji berries
  • 1-2 parsely leaves
  • ⅛ nori sheet

Instructions
 

  • In a large bowl, whisk together vinegar, oil, matcha, and salt. Stir in rice. Taste and season with more salt to taste if necessary.
  • Spread the rice over a cling wrap and place 3 olives, walnuts, 5 goji berries, and parsley in the center. Wrap up into a ball.
  • Cut a thin strip from a nori sheet and divide it into 1 long and 3 short strips for mouth. Cut a zigzag pattern on the long edge of the remaining nori sheet for the front hair design and give 2 cuts on the other long edge to fit the curve of the rice balls. Slice a remaining olive and goji berry. Stuff the sliced goji berries in the center of the sliced olives to make eyes. Decorate the face with nori and olive eyes. Wrap in cling wrap to help the nori sheet soften.
