All you need is dark chocolate to make this luscious and decadent 1-ingredient Vegan Chocolate Mousse. Dark chocolate is melted together with water and whipped over ice to create a light and airy mousse.

This recipe and technique is invented by French chemist Hervé This, a Molecular Gastronomy specialist!

Ingredients of 1-Ingredient Vegan Chocolate Mousse

For this recipe, all you need is just one ingredient: dark chocolate! You also need water but I’m so sure everyone has it so I didn’t count it as an ingredient. To make this chocolate mousse vegan, use dark chocolate. Use your favorite chocolate bar for this recipe, as it significantly influences the final taste of the mousse. I like to use a vegan high cacao dark chocolate bar sweetened with coconut sugar!

For the toppings

Here comes a fun part, topping! You can add any topping you desire but here are my ideas!

  • Extra virgin olive oil
  • Flaky salt
  • Raspberries
  • Strawberries
  • Cherries

How to Make 1-Ingredient Vegan Chocolate Mousse Successfully

Making this 1-Ingredient Vegan Chocolate Mousse is simple and easy, but it can be a little tricky. But you can always start over, give it a try!

Start with mixing the ingredients. In a saucepan, combine chocolate and water. Melt together over low heat until melted together. Then transfer the mixture to a medium-sized bowl.

Next, we’re going to chill and whip the chocolate. Fill a large bowl with ice and water for chilling. Place the bowl of chocolate over the bowl of ice water. Whisk vigorously as the chocolate cools. Remove the bowl from the ice bath immediately after the chocolate starts to firm up. The transition happens quickly! So keep your eyes on it while whisking.

My chocolate mousse in the photo turned out a little thick because I was cooking and shooting at the same time and let the chocolate sit in a cold bowl for a bit longer. But it tastes so good anyway! Remove from the ice immediately when you see the transition.

If you wish it to be a little more soft, but it turned out too firm, don’t be discouraged! You can always start over by melting the mixture and try again to fix it!

Divide the mousse into dessert cups. Add any toppings of your choice and enjoy immediately!

  • Transfer the melted mixture to a medium-size mixing bowl. Fill another large bowl with ice and water. Place the bowl of chocolate mixture over the bowl of ice water. Whisk vigorously as the chocolate cools. Remove the bowl from the ice bath immediately after the chocolate starts to firm up.
  • Divide into serving cups. Add any toppings of your choice. Enjoy immediately!
