Inspired by our beautiful planet, I created this Connecting with the Earth Smoothie. Beautiful blue smoothie is made with antioxidant-rich blueberries and Butterfly pea flower powder. When it’s mixed with matcha and coconut yogurt, it creates a delightful and refreshing smoothie that’s perfect for celebrating Earth Day.

Food and cooking always ground me on Earth, and bring abundance and joy to my life. I hope this recipe reminds us how beautiful our planet is and let’s keep it the way it is. I’m far from perfect, but I believe tiny steps add up!

What You’ll Need

This makes big 1 or small 2 glasses of the smoothie.

  • Frozen Blueberries: Antioxidant-rich base for this Earth smoothie.
  • Frozen Banana: Add sweetness and creaminess. Peel and cut a banana into chunks. Then freeze them in the night before making the smoothie.
  • Medjool Date: Adds extra sweetness.
  • Hemp Seeds: Adds hidden plant protein and makes the smoothie creamy.
  • Oat Milk: Or any milk of your choice.
  • Butterfly Pea Flower Powder: Butterfly pea flower powder is a powder of beautiful blue flowers indigenous to Thailand. It’s rich in antioxidants.
  • Matcha: Use ceremonial grade matcha. High-quality matcha has a vibrant green color that reflects the beautiful forest of mother nature in this smoothie.
  • Coconut Yogurt: For the cloudy effect on the glass.

How to Make Earth Smoothie

First, let’s prepare the bananas. Peel and chop them into chunks. I usually cut bananas into 4 pieces. then freeze them the night before for the smoothie.

The next day, we’re going to make the Earth smoothie. In a blender, add the blueberries, banana, pitted date, hemp seeds, and oat milk. Blend until smooth and creamy. Add the butterfly pea flower powder to add color and extra nutrients. The color depends on the blueberry you use and the color of the smoothie. So adjust the color by adding more or less of the butterfly pea flower powder, starting with 1 teaspoon, and add more for the color you like.

If you want your smoothie to be sweeter, add more dates and blend.

Next, we’re going to prepare the matcha. In a matcha bowl, sift in the matcha powder and pour hot water. Use a bamboo whisk to whisk together until creamy and foamy.

For the assembly, use a spoon to spread the coconut yogurt on the side of the glass. Make it messy and uneven to make it look like a cloud.

Then pour matcha into the glass. Pour the smoothie over it and let the matcha and smoothie mix on their own. Enjoy the beautiful swirl of green, blue, and white!

Ingredients
 
 

  • 1 cup frozen blueberries
  • 1 frozen banana
  • 1 Medjool date more to your taste
  • 1 Tablespoon hemp seeds
  • 1 cup oat milk
  • 1-3 teaspoons butterfly pea powder
  • 1 teaspoon matcha
  • ¼ cup hot water
  • Coconut yogurt for serving

Instructions
 

  • In a blender, add the blueberries, banana, date, hemp seeds, and oat milk. Blend until smooth. Add the butterfly pea powder, starting with 1 tsp, and add more for the color you like.
  • In a bowl, sift the matcha and pour hot water. Whisk together with a bamboo whisk.
  • Spread the coconut yogurt on the side of the glass and pour matcha. Pour the smoothie over matcha and enjoy.
