Healthy Homemade Chocolate Popsicles(Creamy and Fudgy)

These homemade vegan chocolate popsicles are creamy and fudgy desserts you want to stock up in your fridge all summer. These frozen dessert pops are made with simple ingredients, making them a healthier version of the chocolate fudge popsicles. Crunchy chocolate shell coating is made with crunchy almonds and cacao nibs to add extra nutritious crunch to these homemade fudgesicles.

Ingredients of Chocolate Popsicles

These decadent popsicles are made of two parts: the fudgy chocolate popsicles and the crunchy chocolate shell.

For the POPSICLES

  • Coconut Milk: Rich and creamy base of these fudgy popsicles. Use unsweetened kind.
  • Almond Butter: Adds creamy and fudgy texture. Use creamy almond butter.
  • Cacao Powder: Adds antioxidant-rich chocolate flavor.
  • Maple Syrup: Adds wholesome sweetness.
  • Vanilla Extract and Salt: For the flavor.

These chocolate popsicles are delicious on their own, but crunchy chocolate topping made with superfoods like cacao nibs adds an extra satisfying and nutritious crunch.

For the chocolate shell

  • Dark Chocolate Chips: Use dark or any chocolate chips you love.
  • Coconut Oil: Makes molten chocolate smoother.
  • Almonds and Cacao Nibs: Adds satisfying crunch and nutrients.

If you have dairy or gluten allergies, or if you’re serving these pops to someone with allergies, please make sure that all the ingredients meet your dietary requirements. Although the ingredients are naturally gluten- and dairy-free, sometimes they may be processed in facilities that also handle gluten or dairy.

How to Make Homemade Popsicles

First, let’s make the fudgy chocolate popsicles!

In a high-speed blender, blitz coconut milk, almond butter, water, cacao powder, maple syrup, vanilla extract, and salt. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze until fully frozen, for at least 6 hours or overnight.

  • Blending chocolate popsicle ingredients in a high speed blender until creamy and smooth.
  • Filling the white silicon popsicle mold with blended chocolate mixture.
  • Sticking popsicle sticks into each popsicle mold.

Once the popsicles are frozen and ready, we’re going to prepare the chocolate shell.

In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave for 30 seconds. Whisk together to combine until smooth. Microwave longer if necessary, 15 seconds at a time, until smoothly combined.

Run the mold under the running water for 5-10 seconds to help release the popsicle from the mold. Remove the popsicles from the mold. Use a spoon to drizzle chocolate over the popsicles. Quickly sprinkle almonds and cacao nibs over the drizzle of chocolate before it sets. Freeze if necessary to set the toppings. Enjoy!

Ingredients
 
 

For the popsicles

  • ¾ cup coconut milk
  • ¼ cup almond butter
  • ¼ cup water
  • ¼ cup cacao powder
  • 6 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch salt

For the chocolate shell

  • 2 Tablespoons dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 Tablespoon almonds toasted and chopped
  • ½ Tablespoon cacao nibs

Instructions
 

  • In a high-speed blender, blitz milk, almond butter, water, cacao powder, maple syrup, vanilla extract, and salt. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze overnight.
  • In a small microwave-safe bowl, combine chocolate chips and oil. Microwave for 30sec. Whisk together to combine. Microwave longer if necessary, 15sec at a time, until smoothly combined.
