Tamago Sando Japanese Egg Sandwich

Creamy egg salad is stuffed in fluffy shokupan bread slices to create Tamago Sando, a Japanese egg sandwich. You can easily recreate this iconic Japanese convenience store item at home!

Ingredients
  

  • 4 hard-boiled eggs
  • 3 tablespoons Kewpie mayonnaise
  • 1 teaspoon rice vinegar or lemon juice
  • 4 slices shokupan bread Japanese milk bread
  • 2 tablespoons butter softened
  • 1 teaspoon karashi optional, see note1 below
  • Salt
  • Pepper

Additional ingredients for gourmet-style sando

  • 4 soft-boiled eggs peeled

Instructions
 

  • Bring a pot of water to a boil. For hard-boiled eggs, cook eggs for 12 minutes, and for soft-boiled eggs, cook for 8 minutes. Transfer to an ice bath to cool, then peel.
  • Separate the egg yolks and whites of hard-boiled eggs.
  • Chop the egg whites finely and set aside.
  • In a bowl, add the egg yolks, mayonnaise, and rice vinegar. Use a fork to mix until creamy. Then stir in egg whites. Season with salt and pepper.
  • Spread the butter and karashi on one side of each slice of bread.
  • Add half of the egg salad to the buttered side of one bread slice and spread it toward the edges, leaving a thick layer in the center. For the gourmet-style sando, add 2 soft-boiled eggs on top of the egg salad layer. Top with the other slice of bread. Repeat with the remaining ingredients.
  • Wrap the sandwiches in plastic wrap or parchment paper. Let them rest for 5-10 minutes. Slice into halves or quarters. For the gourmet-style sando, Cut into halves. Season the cut surface of soft-boiled eggs well with salt and pepper after cutting.

Notes

Note 1: Karashi (Japanese mustard)
Karashi is optional, but it adds a spicy kick! Karashi is very spicy compared to regular yellow mustard, so a little goes a long way! I use karashi powder and mix it with water before use. Karashi powder usually lasts longer in my pantry than paste tubes.
