Simple Summer Peach Kale Salad with Avocado and Cherries

Kale is massaged in creamy basil lemon dressing and topped with peaches and cherries to create a light and healthy summer salad.

For the Dressing

For the Salad

  • 6 cups thinly sliced Tuscan kale
  • ½ red onion sliced
  • 1 avocado chopped
  • 1 peach sliced
  • 1 cup cherries halved and pitted
  • ¼ cup sliced almonds toasted

Instructions
 

  • Make the dressing: In a blender, blitz all the ingredients of the dressing.
  • Massage the kale: In a large bowl, add kale and half of the dressing. Use your hands to massage the dressing into the kale to soften. Stir in red onion.
  • Assembly: Arrange avocado, peach, and cherries on top of the kale salad. Sprinkle almond slices on top. Toss before enjoying. Drizzle more dressing for your taste.
