Make the dressing: In a blender, blitz all the ingredients of the dressing.
Massage the kale: In a large bowl, add kale and half of the dressing. Use your hands to massage the dressing into the kale to soften. Stir in red onion.
Assembly: Arrange avocado, peach, and cherries on top of the kale salad. Sprinkle almond slices on top. Toss before enjoying. Drizzle more dressing for your taste.
