Fruit Sando (Japanese Fruit Sandwich)

Fruit Sando is a sweet but not too sweet Japanese fruit sandwich made with whipped cream, juicy fruits, and soft shokupan milk bread. Tart fruit and sweet whipped cream complement each other, and fluffy bread folds them together to create a dessert sandwich. It's a simple and easy dessert you can make without any baking skills.

Ingredients
  

  • 1 cup heavy whipping cream
  • 2 Tablespoons granulated sugar
  • 4 slices shokupan milk bread

For the ichigo sando (makes 1)

  • 5 small strawberries top removed

For mixed fruit sando (makes 1)

  • 1 kiwi peeled
  • 2 small strawberries top removed
  • ¼ mango peeled and cut into triangle shape

Instructions
 

  • Make the whipped cream. Add the heavy whipping cream and sugar to a large bowl. Whip until medium peaks form.
  • Prepare the fruit. For ichigo sando, remove the tops from the strawberries. For the mixed fruit sando, peel the kiwi and mango, then cut the mango into triangle shapes. Pat the fruits dry well with kitchen towels.
  • Add cream to the bread. Place one slice of shokupan on a piece of plastic wrap. Add 2-3 tablespoons of whipped cream and spread it toward the edges, leaving a thick layer in the center.
  • Arrange the fruit. For the ichigo sando, place the strawberries in the center, with the tip not facing any corners. Then place the rest of the strawberries between the center piece and the corners, along the line where you plan to cut the sandwich, with the tips pointing to the corners. For the mixed fruit sando, arrange the kiwi flat with the end pointing between the corners. Then place strawberries and mango on opposite corners along the cutting line.
  • Fill the gaps. Add more whipped cream, 5-6 tablespoons, around the fruit to fill any empty spaces. Spread another thin layer of whipped cream on the second slice of bread, then place it on top.
  • Wrap and chill. Wrap the sandwich tightly with plastic wrap. Mark the cutting line on the outside of the wrap if needed. Chill in the refrigerator for at least 1 hour, ideally 3-4 hours.
  • Slice and serve. For a cleaner cut, use a sharp knife and warm your knife before cutting. I run my knife under hot tap water and wipe it dry before slicing. Cut the sandwich along the marked line. Wipe the knife between cuts for a cleaner cross-section.
