Ingredients
  

For the Lemon Maple Dijon Dressing

  • ¼ cup extra virgin olive oil
  • 1 lemon juiced (3-4 tablespoon of juice)
  • 2 teaspoon Dijon mustard
  • 2 teaspoon maple syrup
  • salt and pepper to taste

For the salad

  • cups beets julienned
  • 1 cup carrot julienned
  • ½ apple julienned
  • ¼ cup walnut toasted and chopped
  • ¼ cup fresh dill chopped
  • ¼ cup fresh cilantro chopped

Instructions
 

  • Whisk together all the dressing ingredients.
  • In a large bowl, toss the salad ingredients with the dressing. Taste and season with salt and pepper if necessary.
