Whipped Tofu Toast with Strawberry Rhubarb Jam

Ingredients
  

  • 12 oz firm tofu block pressed to drain
  • 3 Tablespoons maple syrup
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ cup strawberry rhubarb jam
  • 6 slices sourdough bread or any rustic bread toasted

Instructions
 

  • In a blender, combine tofu, maple syrup, lemon juice, and vanilla and blend until smooth and creamy.
  • Transfer the whipped tofu in a bowl and fold in the jam. Do not over mix. Transfer it into a piping bag with a round tip.
  • Pipe the whipped tofu onto the warm toast and enjoy!
