Viral Hot Honey Sweet Potato Beef Bowl is an easy, high-protein meal made of taco-spiced ground beef, air-fried sweet potatoes, cottage cheese, and avocado, and a drizzle of hot honey to tie everything together.

Ingredients
  

For the Bowl

  • 2 medium sweet potatoes cubed into ½ inch pieces
  • 3 Tablespoons extra virgin olive oil divided
  • ¼ teaspoon ground cinnamon
  • 1 lb. ground beef
  • 1 Tablespoons tomato paste
  • 2 cups cottage cheese
  • 2 avocados peeled, seeded, and sliced
  • Hot honey for serving
  • Salt

For the homemade taco seasoning * see note

  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • ¼ teaspoon garlic
  • ¼ teaspoon onion
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • A dash of cayenne pepper

Instructions
 

  • Toss the sweet potatoes with 2 Tablespoons of olive oil, cinnamon, and a pinch of salt. Spread them in a single layer in the air fryer basket. Cook at 400°F for 10–13 minutes, shaking the basket halfway through, until tender and golden on the edges. Work in batches if necessary.
  • In a small bowl, whisk together the ingredients of the taco seasoning.
  • Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart, until browned. Stir in the taco seasoning and tomato paste. Add a splash of water if necessary.
  • In serving bowls, divide the beef, sweet potatoes, cottage cheese, and avocados. Drizzle the hot honey and enjoy. **See note for garnish suggestion.

*Note: You can use 2-3 Tablespoons of store-bought taco seasoning instead of making homemade.
