Chocolate Popsicles

These homemade vegan chocolate popsicles are creamy and fudgy and coated with crunchy chocolate shells made with almonds and cacao nibs.

Ingredients 
 

For the popsicles

  • ¾ cup coconut milk
  • ¼ cup almond butter
  • ¼ cup water
  • ¼ cup cacao powder
  • 6 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch salt

For the chocolate shell

  • 2 Tablespoons dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 Tablespoon almonds toasted and chopped
  • ½ Tablespoon cacao nibs

Instructions 

  • In a high-speed blender, blitz milk, almond butter, water, cacao powder, maple syrup, vanilla extract, and salt. Divide equally into 5 popsicle molds. Cover and insert popsicle sticks. Freeze overnight.
  • In a small microwave-safe bowl, combine chocolate chips and oil. Microwave for 30sec. Whisk together to combine. Microwave longer if necessary, 15sec at a time, until smoothly combined.
  • Run the mold under the running water for 5-10 seconds to help release the popsicle. Remove from the mold. Drizzle chocolate and sprinkle almonds and cacao nibs. Freeze if necessary to set the toppings. Enjoy!
